Craft activities: bakers

The dataset contains the list of artisan activities of baker that is the production of bread, both through manual processing and through the use of machinery and equipment. In addition to location by street and house number, there are other information from the administrative archive. For the interpretation of the data, it must be borne in mind that the trade legislation has undergone numerous changes over time, both in relation to the nomenclature and the classification of activities, and in relation to the type and number of information collected. In some cases, regulatory innovations have introduced variables not present in the archives, enriching the dataset with information. These changes, however, do not affect retroactively in the archive, but are updated at the first time when the owner turns to the offices to communicate any change (translocation, takeover, change in sales area, cumulation of activities....). Therefore, the information contained in the dataset is not necessarily homogeneous, because it is reported at the time of the last communication.
